Grilled Asparagus Bruschetta

I have to admit - this idea came from Pinterest.  The original Pin came from Chow; check it out for the "correct" recipe.  As usual, I used what I had on hand instead of following directions.  It is by lovely happenstance this time things turned out. ^_^






Grilled Asparagus Bruschetta
 Ingredients:

  • 8 slices sourdough bread
  • Liberal olive oil (no conservative oils here)
  • 1 bundle of asparagus, trimmed & halved
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1/3 cup walnuts
  • salt, for seasoning the asparagus
  • freshly ground black pepper, seasoning the asparagus
  • Shredded Irish cheddar cheese (about 1 ounce)


Process:
1.   Pre-heat oven to 400 degrees F
2.   Using a grill pan on medium high heat, grill the asparagus with a little olive oil until tender
3.   Salt and pepper the asparagus and toss while still warm
4.   Meanwhile, line up the bread on a cookie sheet and top liberally with olive oil; add coarsely chopped walnuts
5.   Toast bread and nuts for 5 minutes in pre-heated oven
6.   Top toast with grilled asparagus and shredded cheese
7.  Allow bread to cool and cheese to slightly melt before serving
